Cod baked in cider with mustard, paprika and Cajun spice mix, together with some oregano, thyme and some Mediterranean vegetables.
I call these Fruits of the Dark Forest Meringues because the meringue has some kirsch and cocoa in it – like a Black Forest Gateau. But it’s topped with a different selection of fruit. There’s no cherries in it.
What do you get if you combine an Aubergine Gateau with some sweet tapenade, some rice and some puy lentils? You get a Mediterranean Veggie Bake. Very easy, very healthy, very filling – and quite cheesy.
I love goat’s cheese. And I am craving cheese so much these days. I wanted to try adding some herbs to a roasted peppers and goat’s cheese omelette or quiche.
This was a bit of an experiment. I liked the Apricot Almond Cake so much I wanted to see what it would be like using yoghurt rather than just butter in the batter.
