Refined-sugar-free Cinnamon Apple Cake - sweet & lovely
This was one of the first refined-sugar-free treats I ever made. I recently remade it to get a better for photo of it. And I’ve made it 3 more times since. It’s not for everyone. But if you love cinnamon, almonds and apples you will love this cinnamon apple cake too.
The cake made with sliced apple dusted with a little cinnamon, and topped with banana, ground almonds, eggs and cinnamon. It’s simple, sweet and full of goodness. But I hadn’t made it in a quite a while. It’s full of heart healthy fat and fibre. But just because something is a nutritious treat doesn’t mean it’s low in calories.
In fact my heart-healthy recipes and refined-sugar-free treats are often full of heart healthy fats. So they are not low in calories. But they are very nice. And I feel better indulging in these kind of treats.
The photo of the ingredients below is from 2010 or around that time. I made it with just 2 or 3 bananas and 1 apple. I have sinced reduced the ratio of ground almonds to bananas - you want about 20g - 25g of ground almonds for every banana. So this recipe works great to use up however many (or few) ripe bananas you have. And by ripe I mean they should be a warm yellow with lots of little brown spots on the skin.

- 3 sweet apples, cored & sliced
- 4 - 5 well ripe bananas
- 100g ground almonds
- 2 eggs

Make the cake batter

Grease an oven dish or cake tin with a little sunflower oil. Layer the bottom of the dish with the sliced apples and sprinkle over a pinch of cinnamon. Spread the cake batter over the apple so that it covers them completely. If you really like cinnamon you could also sprinkle a little cinnamon over the top of the cake and with a fork or spoon pat it into the batter.Bake for an hour
Bake in an oven at 180° C for an hour. Take out and leave to cool for at least 20 minutes.
Enjoy!
