Dairy-free and gluten-free made with ground almonds, eggs, olive oil, coffee, cocoa, vanilla and lots of sugar.
This is a dairy-rich vegetarian pie. The topping is creamy mashed potato topped with grated cheese that turns into lovely golden brown bubbling patches as it bakes.
Cooked peas, lemon, hot vegetable stock, mint and spring onion blended into an instant pea mint soup. Quick, easy and quite healthy really.
Why is it lazy? Because you just add stuff to a food mixer and blend. No cooking required, just assembly.
