Bruschetta — gluten-free toast rubbed with garlic, drizzled with olive oil, topped with sliced cherry tomatoes & a sprinkle of salt
The headline says it all. There isn’t much need of a recipe for this. But I want to have it as a breakfast recipe on twimii. Because it’s so easy and simple to make, it’s full of flavour and, most importantly, it’s a heart-healthy option for breakfast.
The current advice on eating a healthy diet says that half your plate should be filled with fruit and/or vegetables - at every meal. It’s easy to think of ways to add fresh fruit to lots of sweet breakfasts. But what about something savoury? And how about something that can be put together really quickly? Bruschetta ticks all the boxes.
In the recipe below I have given 1 teaspoon - 1 tablespoon as the amount of extra virgin olive oil to drizzle over the toast. This is because if you’re not sure about using olive oil on toast, start with a half teaspoon only on each slice of toast. The flavour of the salted tomatoes and the garlic should completely overpower any taste the oil might have. And you could add a little more until you are drizzling one tablespoon of extra virgin olive oil over your toast.
I’m using gluten-free bread obviously. And so far all the ones I’ve tried work great. I prefer it toasted, if it’s a soft springy loaf. But gluten free brown soda bread (shop bought) works great to. And it’s higher in protein and fibre if that interests you.
If you like bruschetta, try it for breakfast. It’s great.
