My Favourite Recipes from abitmoreveg Year One

Last Monday, to be exact, abitmoreveg turned 1 year old. During the week I went through all the recipes I’ve made over the year and picked out my favourites. I was kind of surprised to see how many there were. I decided to arrange them according to meal type – breakfast, lunch, dinner and dessert. Was also surprised that I’d made so few main meals. Definitely want to change that. And I want some more sweet treats. Who doesn’t want more sweet treats. Some more healthyish sweet treats. Actually I want more of everything.

A few of my favourites contain gluten but I really liked those recipes so I decided to add them. Must develop gluten-free versions of those, except I don’t think it’s possible to get a good gluten-free alternative to soda bread. But I’ll happily be corrected on that.

The recipe I’ve made most often is the Lemon Cherry Cake. I went through a stage of making at least one a week a few months back – the supermarkets were filled with these big juicy black cherries this year, they were great. And I love this cake.

But I did make plenty of the less sweet recipes often too.

BREAKFAST

Quinoa Porridge with Caramelized Bananas
Very simple, healthy and tasty gluten-free, vegan option.

Vegan Soft Fruit Cookies
For a light breakfast or gluten-free snack. Refined sugar-free.

Vegan Wholemeal Scones
With Peanut Butter & Jam. I miss these… Contains gluten.

Wholemeal Soda Bread
Have buttered with a boiled egg for a very filling and healthy breakfast. Contains gluten.

LUNCH

Beetroot, Orange & Mustard Soup
A bright, tasty and satisfying soup. Gluten-free.

Marrowfat Pea Soup
A super simple soup that I’ve made for years. Adding a swirl of Greek yoghurt or creme fraiche turns it into something surprisingly good. Gluten-free.

Mushroom & Creme Fraiche Soup
A delicious and creamy soup. Not for everyday. Contains gluten.

Tomato & Puy Lentil Soup
The recipe for this calls for Worcestershire sauce. Traditional Worcestershire sauce contains anchovies and so is not suitable for vegetarian. However there are lots of vegan versions available. The Worcestershire sauce I use is vegan friendly. This also contains dillisk which is a good source of iron. Nutritious and comforting. And gluten-free.

Balti Butternut Squash Soup
Coconut Milk nicely balances the heat in this soup giving. Gentle spicy flavour, very filling and vegan. Gluten-free.

DINNER

Tomato, Mushroom & Olive Lasagne
Serve with a little summer salad. Contains gluten.

Mushroom Moussaka
Serve with a little Quinoa Tabbouleh, some olives and peppery salad leaves. Gluten-free.

DESSERT

Whole Orange Cake with a little Chocolate
Good to follow the Mushroom Moussaka. Or just to have by itself with some black tea. Gluten-free.

Lemon Cherry Cake
My favourite recipe so far. Gluten-free.

Bitter Toffee Pecan Pie
I made this quite a lot before going gluten-free. Must get good gluten-free crust. Must!!! Contains gluten.
