Why is it a lazy beetroot and butter bean dip? Because you just add stuff to a food mixer and blend. No cooking required, just assemble.

Lemon Garlic Butter a easy and tasty sauce for artichokes, potatoes, fish or seafood. It’s especially good with pan fried sea bass.
A dip made with roasted aubergine, olive oil, lemon juice, cumin, garlic and some seasoning.
This is much sweeter than a regular black olive tapenade – so originally I called this Sweet Tapenade. But roasted red pepper, sundried tomatoes and black olive tapenade is a more accurate title.
