An old twimii recipe that I’ve changed a little, it’s a firm favourite of mine and another convenience-health-food recipe.
Cooked peas, lemon, hot vegetable stock, mint and spring onion blended into an instant pea mint soup. Quick, easy and quite healthy really.
Why is it lazy? Because you just add stuff to a food mixer and blend. No cooking required, just assembly.
A dip made with roasted aubergine, olive oil, lemon juice, cumin, garlic and some seasoning.
I’m calling this ready to eat because all the ingredients are from packets or jars and you don’t really need to do much to them. And [spoiler alert] there are anchovies.
This is much sweeter than a regular black olive tapenade – so originally I called this Sweet Tapenade.
Pickled beetroot and goat’s cheese – another great taste combination. As the title suggest this salad is simply a matter of opening some packets, unscrewing a jar, shaking up some dressing and slicing a shallot.
Roasted Yellow Pepper Hummus; it’s hummus with a roasted yellow pepper mixed in. It makes it’s sweeter.
