This is a version of a Bulgarian Tomato Salad (Shopska Salata). I added in rice and chickpeas to make this filling enough to be a full meal. I will definitely be making this again and regularly. Love this!

This pumpkin risotto is simple to make and very tasty. It was my first time cooking a pumpkin. Won’t be my last. I really loved this.
I call these Fruits of the Dark Forest Meringues because the meringue has some kirsch and cocoa in it – like a Black Forest Gateau. But it’s topped with a different selection of fruit. There’s no cherries in it.
What do you get if you combine an Aubergine Gateau with some sweet tapenade, some rice and some puy lentils? You get a Mediterranean Veggie Bake. Very easy, very healthy, very filling – and quite cheesy.
