Strawberries and Feta Cheese Salad

This is kind of a take on the Greek salad which I just love. This salad here is also full of heart healthy ingredients like walnuts and fresh fruit and vegetables.
The herbs I use here are fresh oregano and fresh basil. But they’re optional. If you have them to hand, great. If not, this salad is yummy as is.
I love strawberries and they work surprising well in salads. They also pair really well with both basil and oregano.
The amount of dressing I use in these sorts of salad is very minimal. If you think it needs more, try just adding a teaspoon more of vinegar.

Strawberries and Feta Cheese Salad
Ingredients
- ~400g strawberries, sliced
- ~300g cherry tomatoes, quartered
- 1 cucumber, deseeded & diced
- 1 onion, sliced
- 150g feta cheese
- 60g walnut halves, broken up roughly
- fresh oregano leaves
- fresh basil leaves, sliced roughly
- 1½ tbsp balsamic vinegar
- ½ tbsp extra virgin olive oil
- 4 cups salad leaves of your choice
- salt & black pepper
Instructions
- Put the balsamic vinegar and the extra virgin olive oil in a small jar and shake till well combined. Place the salad leaves in a salad bowl and sprinkle a quarter of the dressing over the salad leaves and gently mix through. Add a pinch of salt and freshly ground black pepper to the rest of the dressing. Combine the sliced strawberries, cherry tomatoes, cucumber and onion, and sprinkle over the remaining dressing. Mix around well and then add to the salad bowl. Scatter over the walnuts, feta cheese, oregano and basil over the salad and gently mix through a little.
